After the heartbreak of Paris, our founder Rabbie Stuart returned to Scotland with his son in tow and found work t the newly built Scotsman Newspaper. There he struck up a friendship with the paper's dynamic editor, Charles Alfred Cooper. Together, they shared a love of malt whisky, fresh game, seafood, and the simple pleasures of tea - a bond that would inspire a lifetime of stories. By 1917, Rabbie retired to the Highlands, where the rugged landscapes and the warmth of a good dram became his daily companions.
The Bothy draws on this history, bringing the spirit of Highland lodges and alpine ski chalets to life. Plush textures, wooden accents and cosy lighting create a space made for unwinding storytelling, and raising a glass to life's adventures. It's a room designed for camaraderie - a place where friends gather, laughter (and beer) flows, and you're invited to savour the moment.

Tucked away on the upper levels of the Beer Palace, The Bothy captures the rugged spirit of the Scottish Highlands and the relaxed charm of an alpine lodge. Warmth radiates from the roaring fireplace as you settle into a plush nook, the flicker of the flames casting a glow over tartan fabrics, antler chandelier, and rich wooden furnishings.

At the heart of the room is its private bar, home to an exclusive collection of whiskies and rums that cannot be found anywhere else in Brewhemia. For those who fancy a pint, the Bothy also draws from our 12 copper tanks and offers a rotating selection of fresh, flowing beer.
